The olive trees are not chemically treated and 
                              they are taken to the mill almost immediately after 
                              the harvest avoiding to acquire an heavvy flavoring 
                              that would result if they were left on the ground 
                              for days. The oil extraction occurs at a controlled 
                              temperature “a freddo” allowing me to 
                              offer an extra-virgin biological oil with very low 
                              acidity and with all its full organolettical characteristics.
